Apparently yesterday was National Rocky Road Day. We missed that. But what we didn’t miss was the opportunity to translate the classic ice cream flavor into a sticky, crisp, can’t-get-enough-of-it popcorn treat.
Here’s what you’ll need:
6 cups plain popped popcorn
2 cups mini marshmallows
¾ cup melting chocolate
½ cup chopped walnuts or almonds
Here’s what you do:
1. In a microwave bowl, combine popcorn and marshmallow.
2. Microwave for 15 seconds, stir, microwave an additional 15 seconds, and then stir until evenly coated with the now gooey marshmallows.
3. Melt the chocolate in a container with a spout or pour melted chocolate into a piping bag. Drizzle the chocolate over the popcorn. Wait 5 minutes for the chocolate to slightly harden, then mix the popcorn, and add the remaining chocolate.
4. Sprinkle the nuts over the popcorn, stir until mixed together, and then enjoy!
